Vegan Ginger Yogurt Berry Granola Cup Recipe
Baking is my thing on a Sunday morning before an afternoon shift at work-so today I made these ginger oat cups, filled with vanilla @coyo_uk yogurt and @coconutcollab chocolate pot. Then I topped them with fruit! They are delicious! 🙌
Mum went for the less healthy option of salted caramel in hers, which she assured me was delicious with the ginger oats!

Vegan Ginger Berry Yogurt Breakfast Cups
These Delicious Oaty Breakfast Cups are Perfect For Breakfast on the Go. Filled with Yogurt and Berries They are Perfect as a Healthy Weekday Breakfast or a Yummy Vegan Dessert.
Ingredients
- 150 g Oats
- 2 tbsp Maple Syrup
- 1 tsp Mixed Spice
- 1 tbsp Ground Ginger
- 2 Tbsp Coconut Milk
- 1 tbsp Cashew Butter
Vanilla and Chocolate Yogurt Filling
- Coconut Colab Vanilla Yoghurt
- Coconut Colab Chocolate Pot
Fresh Fruit Topping
- Blueberry
- Kiwi
- Mango
- Raspberry
Instructions

Pre heat oven to 180c.

Mix your oats with the Mixed spice and Ground Ginger.

Add your maple syrup, cashew butter, and coconut milk.

Mix well.

Spoon your mix into a lined cupcake tin-or cupcake cases if you dont have a tin.

Use the end of a small rolling pin to create the tart effect, creating a cup shape for your filling to go in.

Bake for 15 minute or until golden and crisp.

Remove from oven and leave to cool.

Spoon in your yogurt mix and top with chopped fresh fruit.
