Accidentally Vegan Chocolate Bourbon Cupcake Recipe

Today’s recipe is one I created to have as a treat to enjoy whilst watching the Royal Wedding. I also created a  Healthy Lemon and Elderflower Cake based on the royal wedding cake, which I will link here.

This recipe is actually, gluten free, and refined sugar free if you use sugar free/raw chocolate chips. I love to create incredibly delicious food out of natural ingredients and these are no different! Obviously the bourbons are an added treat which I love to enjoy! If you cant or would rather not add them then just enjoy the cake.

I know lots of people are unaware that bourbon biscuits are actually vegan, many of them are but just make sure you check them! They are my favorite biscuit and I hope you will love these cakes inspired by them as much as I do!

Vegan Bourbon Cupcakes

Fun bourbon cupcakes perfect for making at the weekend for a fun weekend bake!

Wet Ingredients

  • 2 tbsp Maple Syrup
  • 1/2 cup Aquafaba
  • 1/3 cup Coconut Milk
  • 1 tsp Apple cider vinegar
  • 1 tbsp Soda Water

Dry Ingredients

  • 1 tsp Baking Powder
  • 125 g Oats To Make this I use rolled oats blended in my Froothie Blender
  • 1/3 cup coco powder (unsweetened)

Icing (optional)

  • 1 cup Coconut Cream Make sure this is not a block of hard cream as it needs to be whisked.
  • 1 tbsp cocoa powder
  • 1 pack Bourbon Biscuits


  1. Pre Heat oven to 180c.

  2. If you are making your own oat flour. Weigh out oats and pour into blender. Blend until your oats resemble a flour. 

  3. Mix the rest of your dry ingredients into the oats.

  4. Add all of your wet ingredients into the dry and whisk until completely blended.

  5. Spoon your mix into 6 cake cases. 

  6. Place in the oven and bake for 20 minutes 

  7. Remove your cakes from the oven, and using a piping nib with a circular hole, use this to cut holes into the center of the cakes.

  8. While the cakes are still warm, place dairy free dark chocolate chips into the center. 

  9. Allow to cool, and then combine your cocoa powder with the coconut cream and whisk until light and fluffy.

  10. Using a piping kit, if you have one, pipe your chocolate coconut mix onto the cakes. If you dont have a kit then spoon your whisked cream onto the cakes!

  11. If you can eat gluten, then top your cakes with bourbon biscuits, if not enjoy the cakes as they are.
