Healthy Vegan Chickpea Falafel Recipe (Gluten Free)

Today I wanted to share a new favorite recipe of mine Coriander Falafel.
Falafle has been a favorite of mine for a while, so I decided I needed to get creating a healthy vegan recipe. This recipe uses completely natural ingredients and tastes amazing with hints of fresh coriander coming through. I love to have these smashed in a wrap with lettuce and vegan mayo, as well as on their own with a delicious salsa dip!

Healthy Vegan Chickpea and Coriander Falafel
- 50 g Oats
- 1/4 cup Almond Milk
- 1 tin Drained Chickpeas
- 1 handful Corriander
- 1 tbsp Maple Syrup
- 1 tbsp Peanut Butter
Add your Almond Milk, Chickpeas, Corriander, Peanut Butter and Maple Syrup into a blender.
Roll into tbsp sized balls.
Spray with lofat cooking spray.
Bake for 25 minutes.
