THE ULTIMATE VEGAN CHOCOLATE CAKE RECIPE

A tasty Inspired Recipe:

Creating The Ultimate Vegan Chocolate Cake Recipe, that is also GF, has been a mission of mine for a while now. I love creating recipes and getting a fudgy rich chocolate cake to come out perfectly, is something I’ve always been trying to achieve. I was watching a Tasty Video, and saw they added mayo to their cake to get that rich gooey texture, so the secret to this cakes success is actually vegan mayo! 😍

I think the blend of flour you use in a recipe is also essential and getting the exact amounts right was a mission. Oats add a lovely sweetness, but they absorb moisture, so I needed to blend them with both rye and rice flour. Using sainsburys unsweetened cocoa powder is fab for getting a really rich deep flavour.

The Vogue Veggie Chocolate Cake Recipe:

  • 100g rice flour
  • 100g rye flour (use buckwheat for gluten free)
  • 100g Oats
  • 50g cocoa powder unsweetened
  • 1/2 cup soda water
  • 1/2 cup apple juice
  • 1 tin drained chickpea water
  • 100g melted coconut oil
  • 100g xytol
  •  20 g vegan mayo
  • 1/2 tsp cream tartar
  • 1 tsp baking powder
  • 1/2 tsp bicarb of soda

Chocolate Icing Inside the Cake:

  • 100g vegan butter I used @florahealthy
  • 25g icing sugar
  • 25g chocolate Powder

Chocolate Glaze:

To Make:

Pre Heat oven to 180.

Mix your dry ingredients together apart from the xytol.

Melt 100g coconut oil over a low heat until clear.

whisk Aqauafaba (Chickpea water) for 3 minutes until thick like whisked egg whites)

add 100g xytol, to the aquafaba and pour over dry mix.

Add 20 g vegan mayo, soda water, and apple juice and whisk

Place into two greased cake tins.

Bake for 20 minutes.

Remove from oven and allow to cool.

To make the Vegan Butter Cream Filling (optional)

Whisk 100g vegan butter I used @florahealthy, 25g icing sugar, and  25g unsweetened chocolate powder, until light and fluffy.

Spoon onto cake when cooled.

To Make the Vegan Chocolate Glaze:

Melt your coconut oil. Add the chocolate powder and mix well. Pour over the cake, starting at the center and guiding it out with a knife.

Finish with strawberries, and piped butter cream swirls.

    How interesting that the mayo helps with the texture. I have tried a chocolate cake with mayo in years ago but the person who made it just said it was for convenience to replace eggs or something, but for it to help with the texture totally makes sense. I will keep this recipe bookmarked, I want to give this one a go!

    Just seen the link on the flea fb page..I keep meaning to try baking with mayo! Sat reading this and watching Nigella Lawson tuck into the biggest slice of cake I think today is going to have to be a bake n gorge day!!! #tots100
