These delicious light and fluffy pancakes are made with oat flour, and aquafaba (chickpea water) so that they can be enjoyed by everyone no matter what their dietary requirements. They are even banana free for anyone who isn't the biggest banana pancake fan!
Mix together your dry ingredients
Whisk the aquafaba until fluffy and mix your wet ingredients into the dry until fully combined.
Heat a pan on a medium high heat (7/10 on my hob), with a tsp of coconut oil for each pancake. Also turn on your oven to a low heat to keep the pancakes warm, after they have been cooked.
Test of the pan is hot enough with a small amount of mix. If it is then add 1/5 the mixture and cook until matte looking on top.
Flip and cook for a further minute or until golden.
Keep warm in a low heat oven.
Repeat until all the pancakes are cooked.
Top with your toppings layering the nut butter and berries between the layers.
