Fun bourbon cupcakes perfect for making at the weekend for a fun weekend bake!
Pre Heat oven to 180c.
If you are making your own oat flour. Weigh out oats and pour into blender. Blend until your oats resemble a flour.
Mix the rest of your dry ingredients into the oats.
Add all of your wet ingredients into the dry and whisk until completely blended.
Spoon your mix into 6 cake cases.
Place in the oven and bake for 20 minutes
Remove your cakes from the oven, and using a piping nib with a circular hole, use this to cut holes into the center of the cakes.
While the cakes are still warm, place dairy free dark chocolate chips into the center.
Allow to cool, and then combine your cocoa powder with the coconut cream and whisk until light and fluffy.
Using a piping kit, if you have one, pipe your chocolate coconut mix onto the cakes. If you dont have a kit then spoon your whisked cream onto the cakes!
If you can eat gluten, then top your cakes with bourbon biscuits, if not enjoy the cakes as they are.
