Vegan Ginger Berry Yogurt Breakfast Cups

Ingredients

  • 150 g Oats
  • 2 tbsp Maple Syrup
  • 1 tsp Mixed Spice
  • 1 tbsp Ground Ginger
  • 2 Tbsp Coconut Milk
  • 1 tbsp Cashew Butter

Vanilla and Chocolate Yogurt Filling

  • Coconut Colab Vanilla Yoghurt
  • Coconut Colab Chocolate Pot

Fresh Fruit Topping

  • Blueberry
  • Kiwi
  • Mango
  • Raspberry

Instructions

  1. Pre heat oven to 180c.

  2. Mix your oats with the Mixed spice and Ground Ginger.

  3. Add your maple syrup, cashew butter, and coconut milk.

  4. Mix well.

  5. Spoon your mix into a lined cupcake tin-or cupcake cases if you dont have a tin.

  6. Use the end of a small rolling pin to create the tart effect, creating a cup shape for your filling to go in. 

  7. Bake for 15 minute or until golden and crisp.

  8. Remove from oven and leave to cool.

  9. Spoon in your yogurt mix and top with chopped fresh fruit. 

  10. Enjoy!
